The name 'Mémoire' is French for 'Memory'. Eating Mémoire truffle cheese is such a memorable experience, we chose this very appropriate name.

What are truffles?

Truffles are a group of several valuable and highly sought-after edible species of underground mushrooms. Their earthy aroma is similar to that of deep-fried sunflower seeds or walnuts. A renowned Italian truffle company has granted us exclusive use of their finest Italian black summer truffles for our Dutch cheeses.

What does pasteurized mean?

Pasteurization is the process of heating milk, prior to making the cheese, for the purpose of destroying viruses and harmful organisms such as bacteria.

What kind of wines can I best serve with Mémoire?

Most white wines are a good accompaniment for Mémoire. A red wine may compliment the cheese, but it is important to seek a good balance and not choose a strong wine that overpowers the rich truffle flavor.

How can I best store Mémoire?

Mémoire is best kept in a cold, dry and dark storage area at an ideal temperature of 12°C (53°F). For storage in a normal refrigerator, cover the cheese in plastic wrap and keep refrigerated at 7°C (41°F).

I found mold on my cheese; what should I do?

When cheese is improperly stored or kept for a very long period, mold can appear. It is best to generously trim off the mold, wipe the cheese and be sure to cover and store as advised.

Are there any known allergies to Mémoire cheese?

Truffles contain glutamic acid, so people with sensitivities to monosodium glutamate (msg/flavor enhancer) could possibly react the same way to truffles. People with yeast allergies are often advised to avoid eating foods containing mushrooms. The pasteurization process eliminates most of the risks associated with eating cheeses. Gouda cheese is safe for consumption by pregnant women.
